Mastave – Chard Tzatziki

Mastave is taken from the 15th century translation of the book Kitabü’t-Tabih which was published in the 13th century. This is a very old recipe, but it is a very healthy diet dish. Very easy to prepare, this dish will be a nice alternative with great taste. It is a variation of Cacik (tzatziki). It is recorded that Mastave was served at the banquet of Sultan’s Divan (Council of State) on 13th June, 1469.

  • 1 bunch of Chard
  • 350 gr yogurt
  • 2 - 4 cloves of garlic
  • Black onion seeds
  • Salt


  1. While buying try to select a bunch of chard with the largest leaves. Break off the leaves from the stems. Chop the stems into several pieces. (Cut them both lengthwise and crosswise)
  2. Put all the chopped stems and the leaves in boiling water and cook for 4 - 5 minutes.
  3. Ground garlic cloves with some salt and add in the yogurt. Mix well.
  4. Take the boiled chards from the pot, drain their water and place them on a plate.
  5. Spread the garlic yogurt on and sprinkle with black onion seeds.
  6. Enjoy.
