Ottoman Poorman’s Salad

Although it is named as a salad, I think this dish qualifies as a warm mezze, or a warm starter. This recipe is from the cookbook of Mahmud Nedim bin Tosun. It is easy to make.

The taste of the dish differs much between warm and cold and I strongly recommend it warm. So, eat it as soon as it is served, don’t let it cool too much.


Ottoman Poorman’s Salad

  • 2 large tomatoes
  • 4 tablespoons of olive oil
  • Lemon
  • Fresh parsley
  • Salt


  1. Select the roundest and smoothest of large tomatoes.
  2. Cut in half and remove the seeds.
  3. Season with salt to taste.
  4. Place on grill with cut sides down, on low heat.
  5. Turn after 5 minutes and let it lose its juices.
  6. Add a teaspoon of olive oil in each inner part of the tomatoes.
  7. Keep on the grill for another 10 minutes.
  8. Remove from heat with the help of 2 spoons. Be careful not to spill the oil and juices.
  9. Sprinkle with finely chopped fresh parsley.
  10. Squeeze the lemon on top and serve.
  11. Enjoy.
